Behind the Scenes For Finals Breakfast In Maryville College 

Every semester, Maryville College students look forward to Finals Breakfast, which is a free nighttime tradition for all students, offering a fun break from exam stress. This is organized by Metz Culinary Management, and the event involves careful planning and effort in order to make it happen. 

“We are pretty practiced at putting on Finals Breakfast, as this is our 11th year serving the event,” said James Dulin, General Manager for Metz. Once the menu is set, Metz orders disposable dinnerware, cups and food items days in advance. 

“We use Genera Bio paper products for the plates and bowls,” Dulin explains. The quantities are based on participation from previous years. He mentioned that in the fall of 2023, more than 400 students attended the finals breakfast. For a rough calculation of preparing the food, they required around 100 pounds of eggs, 60 pounds of bacon, 60 pounds of hash browns and 500 biscuits. 

The event does rely on teamwork. “We have 10-12 Metz staff and as many as 30 MC staff and faculty volunteers,” Dulin explained. The menu, which is typically based on traditional Southern breakfast fare, remains consistent with minor variations each year.

Metz ensures there’s enough food for everyone, and most students typically go through the line just once. For those with dietary preferences, small quantities of vegetarian options are available upon request, though past underuse has led to reduced offerings.

One thing that Metz does focus on is sustainability, in terms of eliminating food waste. “All overproduction will be up-cycled and put into food recovery to benefit the wider Blount County community,” says Dulin.

While the Finals Breakfast precedes Metz’s involvement, their impact aligns well with their main mission. “Metz strives to be an integral part of the student’s experience here at Maryville College, and this is but one expression of our outreach.” says Dulin. 

In the long run, Dulin hopes students leave with more than full plates: “Time for a fun and engaging break from their studies.” 

With songs, giveaways and great food, Finals Breakfast continues to be an appreciated campus tradition.
